I’ve had several people ask for the recipe for a casserole I posted on Twitter the other day, so I figured I would just write it up on here and post it. In that tweet I mentioned it was Keto friendly, well that might not be entirely accurate.
It’s probably more under the guidelines for Atkins than Keto but anyway here’s how I made it. Honestly I just made it up as I went along.
Complete list of ingredients:
3 pounds of hamburger
1 white onion
1 packet of taco seasoning
3 bags of cauliflower tots
1 bag of shredded cheese
12 slices of pepper jack cheese
Throw the tots in the oven while you cook the hamburger and onions, adding the taco seasoning to the beef. Once you have the tots and hamburger cooked then you can assemble the casserole. Butter a 9×13 pan and put down a layer of tots, then cover those with six slices of pepper jack cheese. Now dump your taco meat in and cover it with the other six slices of pepper jack. Now put the next layer of tots on top that. Finish it off with some shredded cheese and any leftover meat you have. One thing I tried after I posted the picture was drizzling some Deadeye BBQ sauce and ranch over it. It turned out really good. Enjoy your tots people!
